TIRÓPITA (CHEESE HAND PIES)

This looks amazing!

Today’s recipe is an homage to my childhood, like most of my recipes. Traditionally, tiropita is a usually a phyllo dough feta cheese pie. Sometimes, though, a different type of cheese is included. Today, I’m using my flaky, buttery pie crust dough and the results were nothing short of amazing!

My favorite cheese besides feta cheese is Irish cheese a nutty sharp cow’s milk cheese with a little bit of sweetness for a perfect balance. European cheeses and dairy products in general, are a tad much tastier and better quality wise, than American cheeses. Sorry my American friends, no offense, is just that my taste buds are a bit picky sometimes!

Flaky, addictive buttery cheese hand pies with the bright herbal note of thyme to balance the fat from the dairy. Everybody will fall in love with these little beauties!
